The Best Banana Bread
Makes 1 large loaf or 4 mini loaves
Ingredients:
2 cups gluten free flour (sub with equal amount of regular flour if don’t want gluten free)
1 tsp baking soda
1/2 tsp salt
1 egg
1 1/4 cup sugar
½ cup vegetable or canola oil
2 Tbsp buttermilk or milk (sub almond milk if making dairy free)
½ tsp vanilla
3 bananas mashed very well
Optional additions:
½ cup finely chopped walnuts
½ cup chocolate chips
Directions:
Preheat oven to 325 degrees.
Add flour, baking soda and salt to a small bowl and set aside.
Mix egg, sugar and oil and stir until well combined. Add the dry ingredients to the wet and stir well. The mixture will be thick and dry.
Using a small bowl, mash bananas well with back of a fork or spoon. This will ensure they incorporate evenly into mixture.
Next add milk, vanilla and bananas to the mixture and stir until incorporated.
Mix in any optional ingredients (walnuts and/or chocolate chips) and pour into a loaf pan that has been sprayed with nonstick cooking spray.
Cook 50-75 minutes, checking regularly until a knife comes out clean. Let sit on cooking rack 10 minutes before cutting. Fantastic when served with pumpkin butter or apple butter.
If you have mini loaf pans, cook approximately 35-50 minutes or until a knife comes out clean.
