The Best Banana Bread

Makes 1 large loaf or 4 mini loaves

Ingredients:

  • 2 cups gluten free flour (sub with equal amount of regular flour if don’t want gluten free)

  • 1 tsp baking soda

  • 1/2 tsp salt

  • 1 egg

  • 1 1/4 cup sugar

  • ½ cup vegetable or canola oil

  • 2 Tbsp buttermilk or milk (sub almond milk if making dairy free)

  • ½ tsp vanilla

  • 3 bananas mashed very well

Optional additions:

  • ½ cup finely chopped walnuts

  • ½ cup chocolate chips

Directions:

  • Preheat oven to 325 degrees.

  • Add flour, baking soda and salt to a small bowl and set aside.

  • Mix egg, sugar and oil and stir until well combined. Add the dry ingredients to the wet and stir well. The mixture will be thick and dry.

  • Using a small bowl, mash bananas well with back of a fork or spoon. This will ensure they incorporate evenly into mixture.

  • Next add milk, vanilla and bananas to the mixture and stir until incorporated.

  • Mix in any optional ingredients (walnuts and/or chocolate chips) and pour into a loaf pan that has been sprayed with nonstick cooking spray.

  • Cook 50-75 minutes, checking regularly until a knife comes out clean. Let sit on cooking rack 10 minutes before cutting. Fantastic when served with pumpkin butter or apple butter.

  • If you have mini loaf pans, cook approximately 35-50 minutes or until a knife comes out clean.
