Fish Tacos with Apple Slaw and Avocado Cream
Serves 4
Fish Tacos:
Tortilla Crusted Tilapia (from Costco) or sub 4 filets of tilapia, sprinkled with taco seasoning
Corn Tortillas
Cook tilapia according to package directions and break into small pieces before serving. If using filets of tilapia, cook at 400 degrees for 7 minutes. Layer tacos into corn or flour tortillas (we like the small sized ones) and top with Apple Slaw and dollop of Avocado Cream. Serve with side of Spanish rice and pinto beans.
Apple Slaw
1 bag red cabbage
1 bag coleslaw
1 Honeycrisp Apple, diced
2-3 Green onions or 1 shallot, diced
¼ c avocado oil
2 tbsp white or red wine vinegar
1-2 Tbsp lime juice
1 tsp celery salt
½ tsp kosher salt
¼ tsp black pepper
Mix all ingredients together in large bowl and toss. Let sit 5-10 minutes to combine flavors before serving. Great on fish tacos.
Avocado Cream
1-2 avocados, pitted and diced (add depending on amount of avocado flavor you want)
½ cup sour cream
½ cup avocado mayonnaise
1 Tbsp lime juice
Dash of kosher salt and pepper
Place all ingredients in Cuisinart or blender. Blend until well combined. Serve on tacos, eggs, burgers or just about anything!
