Buffalo Chicken and Waffles
Buffalo Chicken and Waffles • Alright friends, whether it’s Game Day or a weekday, it’s the perfect time for Buffalo Chicken and waffles. It’s one of the THE BEST dishes you’ve ever had. Only a handful of ingredients and a crockpot and you are ready to go. Add in our easiest and most delicious waffles plus our 5 minute slaw and you have a winning meal! Trust me, you will thank us later! 🏈
Serves 8
Ingredients:
Buffalo Chicken:
2 lbs chicken breasts
1 onion, chopped
1 packet ranch seasoning
1 - 12 oz bottle buffalo sauce
Slaw:
2 cups shredded carrots
4 celery stalks, diced
4 cups shredded green cabbage
1/2 cup olive oil
1 tsp celery seed
1/2 tsp kosher salt
1/4 tsp black pepper
1 packet ranch seasoning
1/4 cup white vinegar
Waffles:
2 cups flour (sub gluten free, if desired)
1/2 cup sugar
1/2 tsp salt
1 Tbsp baking powder
8 Tbsp melted butter
2 eggs
1 1/4 cups milk
1 tsp vanilla extract
To Serve:
5 oz crumbled blue cheese
Ranch dressing
Directions:
Add chicken breasts, garlic, onion, buffalo sauce and ranch seasoning in a crock pot. Mix to combine. Ensure all chicken breasts are covered in sauce. Cover and cook on high for 5 hours.
With 30 minutes remaining in cook time, shred chicken with two forks. Continue cooking for remaining time.
While chicken is finishing, prepare waffles and slaw.
Combine carrots, celery and cabbage in a medium bowl. Set aside. Combine remaining ingredients in a small bowl and whisk well. Pour over top of slaw. Toss well. Let sit until ready to serve.
Preheat waffle iron and spray with nonstick cooking spray.
In a medium bowl, mix all waffle ingredients. Whisk until smooth. Add 1/3-1/2 cup batter to each section of waffle maker. Close lid and cook until lightly browned, roughly 4 minutes.
Remove cooked waffles and repeat until all batter is used.
Cut waffles in half diagonally. Top with shredded buffalo chicken. Top with slaw. Garnish with blue cheese and ranch. Repeat with all waffles. Enjoy!
