Roasted Delicata Squash

The perfect side dish for Thanksgiving or for a family dinner! A little sweet, a nice crunch and beautifully colorful.


Serves 4-6

Ingredients:

1 lb delicata squash, halved and seeds scooped out

1/4 cup olive oil

1 1/2 tsp kosher salt

1/2 tsp black pepper

1 shallot, roughly chopped

Honey or maple syrup

4 oz goat cheese

2 Tbsp pepita seeds

2 Tbsp pomegranate seeds

Fresh dill

Directions:

Preheat oven to 425 degrees.

Cut squash into 1/2” wide moons. Add to a large gallon sized bag with olive oil, salt, pepper and shallots. Seal bag and toss to combine.

Spread coated squash on baking sheet. Bake for 20-25 minutes or until lightly golden brown. Let cool for 5 minutes.

Spread delicata on serving platter. Drizzle lightly with honey or maple syrup. Sprinkle with crumbled goat cheese, pepitas and pomegranate seeds. Garnish with fresh dill.
