Overnight Baked French Toast
Need a perfect solution for brunch or just a weekend breakfast for the family? This is easy, fast and delicious! All of our favorite flavors from our traditional French Toast simple evolved for casserole form. I love that it can be done ahead to save time the “morning of.” I promise you, this is a crowd pleaser!
Serves 8
Ingredients:
1 loaf thick bread (Texas toast, challah or brioche work well)
8 eggs
1 cup milk or dairy free milk (I prefer almond milk)
1 cup heavy cream
1/2 tsp kosher salt
1 tsp cinnamon
1/2 tsp nutmeg
1/2 tsp pumpkin pie or apple pie spice
1 tsp vanilla extract
1/2 cup granulated sugar
3 Tbsp unsalted butter, cubed
3 Tbsp brown sugar
Directions:
Place slices of bread in a single layer across a baking sheet. Leave out the day before you are planning to bake the casserole. This allows the bread to slightly harden and better absorb the liquid. If you don’t have time for this step, simply bake a few extra minutes.
Spray a large 13 x 9 baking dish with nonstick cooking spray. Set aside.
When ready to prepare the casserole, cut bread into cubes, roughly 1” square. Place cubed bread pieces in baking dish.
In a small bowl, combine eggs through granulated sugar. Whisk well. Pour mixture over bread, trying hard to coat all pieces. Using clean hands, gently press bread down into baking dish so it absorbs as much liquid as possible.
Cover with foil and refrigerate overnight.
Preheat oven to 350 degrees. Remove foil from casserole. Top casserole with cubes of butter and sprinkle with brown sugar.
Bake 35-40 minutes or until nicely golden brown.
Serve with syrup, powdered sugar or fruit.
