One Pot Burrito Bowl

You love one pot meals as much as we do!  And, this one is fast, super high in protein, gluten free and delicious!  Have it on the table in just over 20 minutes.  Leftovers are great for lunch the next day.  Even better?  Use leftovers tomorrow inside of taco shells or a tortilla.

Serves 4-6

Ingredients:

3 Tbsp unsalted butter

1 yellow onion, diced

3 garlic cloves, minced

2 lbs ground turkey

1 tsp garlic powder

1 tsp smoked paprika

1 tsp onion powder

1 tsp ground cumin

1 Tbsp chili powder

1 tsp kosher salt

1/2 tsp black pepper

15 oz can white cannelini beans, drained

1 can green chiles, drained

2 - 10 oz bags frozen cauliflower rice

1/2 cup broth or water

Juice and zest of 1 lime

To Serve:

Cotija cheese, crumbled

Shredded lettuce

Tomatoes, diced

Fresh cilantro

Lime wedges

Directions:

Heat a large stockpot or high sided skillet over medium heat.  Melt butter.  Add onion and garlic.  Cook 3-4 minutes.  Add ground turkey and break up with a spoon or spatula.  Cook 7-8 minutes or until lightly browned.  Add seasoning (garlic powder through black pepper).  Stir to combine.

Turn heat down to low.  Add beans, chiles, cauliflower rice and water.  Stir to combine.  Cover and cook 8-10 minutes or until cauliflower rice is cooked through.

Add lime zest and juice.  Taste and adjust seasoning (salt and pepper) as needed.  Serve directly out of pan.  Garnish with toppings of choice and serve.
