Loaded Rice Cakes
Let’s face it, eating healthy is hard. Often tight on time and short on energy, I try to keep some healthy ingredients on hand to stay on track. These are ready in under 5 minutes and a great snack or even part of a quick lunch! Also great after a workout or for an evening snack. The options are endless!
Serves 1
Ingredients:
2 rice cakes (I prefer white cheddar)
1/4 cup favorite hummus
2 mini cucumbers, sliced
1/4 cup mini tomatoes, sliced
Olive oil
Finishing salt
Directions:
Spread hummus evenly over rice cakes. Top with sliced cucumbers and tomatoes. Drizzle with olive oil and sprinkle with a little finishing salt or kosher salt.
Want to get extra crazy? Add a sliced or diced hard boil egg for extra protein.
