Ground Beef Tacos
It’s Taco Tuesday - let’s go! Ground beef tacos are familiar to most but I promise you, these are better than your basic taco! Full of flavor, crowd pleasing and fast - the best qualities for a perfect weeknight meal. Serve with rice, beans or our Elote Street Corn Dip.
Serves 4, 2 tacos each
Ingredients:
2 Tbsp unsalted butter
1 shallot, diced
3 cloves garlic, minced
1 lb ground beef
2 tsp smoked paprika
1 tsp chili powder
1 tsp cumin
2 tsp garlic powder
2 tsp onion powder
1 tsp kosher salt
1/2 tsp black pepper
1 Tbsp lime juice
1 can green chiles, undrained
1 can pinto beans, drained and rinsed
To Serve:
8 corn tortillas
Shredded lettuce
Diced tomatoes
Avocado, cubed or sliced
Cotija cheese, crumbled
Cilantro lime Crema (see below)
Directions:
Heat a large skillet or stockpot over medium heat. Melt butter. Add shallot and garlic and cook 3-4 minutes. Add ground beef. Break apart with spoon or spatula. Start to lightly brown. Add spices (paprika through pepper). Mix well to combine. Cook 8-10 minutes.
Add lime juice and scrape any pieces off bottom of pan. Add chiles and beans. Mix well to combine. Turn heat to low and cover.
Using tongs, warm tortillas directly over gas burner set to low, or in a skillet. Assemble tacos with ground beef mixture and desired toppings.
Cilantro Jalapeño Crema:
1 bunch fresh cilantro, stems removed
1/2 jalapeno (remove seeds if you want it less hot)
2/3 cup sour cream
2/3 cup avocado mayonnaise
Juice of 1 lime
Pinch of salt
Directions:
In a food processor, combine all ingredients for cilantro jalapeño crema and process until smooth. Set aside.
