Apple, Cheese and Chive Salad

One of our favorite salads in the Twin Cities is from Cafe Lurcat.  It’s simple, easy, unique and oh so delicious.  This is always a hit whenever we serve it!  While I’m not sure of Lurcat’s exact recipe, our flavors are reminiscent of it.  Not your traditional “salad,” this is always a perfect addition to any menu.

Serves 6

Ingredients:

1 lb apples, roughly 3 apples (I like honeycrisp)

1/2 lb manchego cheese

1/4 cup fresh chives, chopped (approx 1 bunch)

Kosher salt

Black pepper

2 Tbsp olive oil

1 tsp lemon juice   

Directions:

Julienne apples and manchego using a mandolin.  If you don’t have a mandolin, simply cut into thin, uniform, matchstick pieces.

Add to a large bowl.  Combine with chives.  Add pinch of salt and pepper, olive oil and lemon juice.

Gently toss and serve.
